Patè di Olive Salentino

(Olive Patè of Salento)
A timeless taste of Salento, perfect as an appetizer or a touch of Mediterranean flavor for any dish.
Ingredients
200 g high-quality Cazzetta black olives (pitted)
2 tbsp Cazzetta Extra Virgin Olive Oil
1 clove garlic, finely chopped
1 tsp capers (optional, rinsed)
3–4 anchovy fillets (optional for depth of flavor)
Freshly ground black pepper to taste
A few drops of lemon juice (optional, for brightness)
Preparation
Blend the ingredients:
Place the olives, garlic, and capers (and anchovies if using) in a food processor.
Add olive oil slowly:
While blending, drizzle in Cazzetta Extra Virgin Olive Oil until a smooth yet slightly textured paste forms.
Season and balance:
Add a touch of black pepper and, if desired, a few drops of lemon juice for freshness.
Serve:
Transfer to a small bowl, drizzle with a little more olive oil, and serve with toasted bread, fresh focaccia, or alongside cheeses and grilled vegetables.
