Olive Pate'

Ingredients and Procedure
Chop the olives finely with a sharp knife. Place the chopped olives in a bowl with the lemon zest or ½ orange juice, salt, pepper and ½ glass oil.

Mash the ingredients together and cook for 45 minutes. Serve with crackers or thin slices of toasted bread with a extra virgin olive oil.
