Calamari Ripieni

(Stuffed Squid Salento style)

Ingredients (for 4 people)

500g (1lb) squid
1 egg
2 garlic cloves
1 bunch italian parsley
basic tomato sauce
CAZZETTA Extra virgin olive oil
salt and pepper to taste


Clean the squid, removing the ink bladder, eyes and mouth. Finely chop the tentacles with garlic and parsley. Thoroughly combine the beaten egg, salt, pepper and two handfuls of breadcrumbs. Stuff the squid with the mixture and seal with wire to prevent leaks. Fry in oil then add the tomato sauce and salt and pepper to taste. Cover and cook. Remove the wire before serving.
